Although both cuisines are heavy on dough and meat, Turkmen cuisine is Central Asian in origin; it includes its own distinctive flavors that are little known in Turkey, such as işlekli, fitchi, petir (Turkmen bread) and steamed manti. Its cooking techniques and balance of spices are also different.
Both belong to the Central Asian culinary family and share common elements such as pilaf (palaw), manti and samsa. However, Turkmen cuisine has its own dishes like işlekli, fitchi and petir (Turkmen bread); Fitchiria focuses especially on these Turkmen classics.

Turkmen cuisine generally has a balanced flavor profile that is not overly spicy; spices are used to bring out the taste of the meat and dough rather than to overpower the dish. You can specify your spice preference when ordering.
Menu & Dishes
Our most-favored flavors are fitchi, işlekli, pelmeni, steamed manti, samsa and petir (Turkmen bread), along with various kinds of manti. If you're coming for the first time, we recommend starting with işlekli and fitchi.
İşlekli is a traditional Turkmen meat-filled pastry, made by placing a filling of minced meat, onion and spices inside thinly rolled dough and baking it. It is one of the essentials of Turkmen tables and one of Fitchiria's signature flavors.
Fitchi is a hearty pastry unique to Turkmen cuisine, made by baking dough and a meat filling together. The inspiration behind our restaurant's name, this flavor is one of our most beloved dishes.
Petir is the traditional Turkmen tandoor/oven bread; with its layered, lightly oiled dough, it is crispy on the outside and soft on the inside. It is indispensable on Turkmen tables and appears fresh on our menu.
Russian/Central Asian-style manti (pelmeni) is larger than Turkish manti and is cooked by boiling in water; it is generously filled and hearty. While Turkish manti is small and served with yogurt after boiling, pelmeni is more often served with broth, butter or sour cream.
Yes, lule kebab is among our grilled meat options. It is made by grilling spiced minced meat on a skewer and is served together with Turkmen bread.
